Pat Kotsonis is a star of Manhattan's restaurant scene by doing a 4-star job at venues like Daniel, Bouley and Le Bernardin. His deep resume includes Executive Chef at Mono, and Newark, NJ's Maize in the Robert Treat Hotel, where patrons on any given night included Mayor Sharpe James, Mary J. Blige, and the cast of The Sopranos. Since then, this outer-borough native has come back home with the opening of Ally's, a luncheonette delightfully servicing a cast of neighborhood characters.
Now, PK's Under the Bridge Cafe is his sophomore effort, a place that can give range to Kotsonis' meals that, as The Star-Ledger describes, "are beautifully conceived and equally well-produced and presented." Pat Kotsonis graduated from the New York Restaurant School at the ripe age of 18, after which, he began training with his mentor, Jean-Michel Bergougnoux. When asked how cooking began for him, he answered, "My mom left me home alone when I was 15. I got so hungry I made an antipasto platter."
This native son, in his latest effort since crossing back over the bridge, has created PK'S Under the Bridge Cafe, a place that is sure to provide Staten Island with its newest hot spot. Kotsonis designed and created his own menu. The food is more imaginative than any description can reveal. It is pan-Asian; there is a French twist; there are echoes of decidedly Mediterranean flavors. Kotsonis' food is all of those things, or none of them. In its most final form- it is American food.
This eclectic American cuisine is a compilation of the best qualities taken from many traditions. And that's American. It's all a-jumble, something all his own. Chef Pat Kotsonis' exciting drink menu includes signature PK's Mojitos, Flirtinis, and wine.
